Speaking of the cons of electric cooktop, the first thing that comes to my mind is the slow reaction time. Electric cooktop can be slow in terms of heating the pots and pans. Besides, some models of electric cooktop might be lacking in terms of power and temperature. Some high temperature cooking such as quick boiling and frying with a wok might not be possible with electric cook top. You might want to check with the specs before purchasing any cooktop. Some low end electric cooktop certainly lacks far behind its gas counterpart. But most high end and expensive electric cooktop will have a workaround for this issue.
Cooks who would rather save on energy would be more inclined to use an electric cooktop. Keep in mind, electric stoves are not overly environmentally friendly. Heat from the electric stoves are in constant contact with saucepans and pots. Because more times than not, electricity coming from an electric stove is not from renewable energies. This wasted heat will seep into the atmosphere and add to greenhouse gases. Electric cooktops are a good choice for cooks who want to use low temperatures for cooking. However, electric stoves are more costly than gas cooktops because they are manufactured with material that is more costly such as halogen, semi-halogen, and radiant coil. However, choices of electric cooktops are varying more and more and the newer type, induction is becoming popular.
Other disadvantage of electric cook top compared to gas cooktop is the power supply. If there is a cut in the power supply, then there will be no cooking. In short, no electricity means no cooking. On the other hand, you can still do whatever cooking you like with gas cooktop even if there is no electricity.
Here is the drawback to gas cooktop - they are NOT easy to clean! I can`t tell you how many people tell me about how they`ve scratched the porcelain or stainless steel on their cooking surface trying to scour it clean. And that`s not to mention normal heat discoloration that is easily visible after regular use with stainless steel cooking surfaces. The grates are also hard to keep looking new. Grates should not be washed in the dishwasher as the rubber grommets will wash out. The grates will more than likely develop rust in the dishwasher, too.
Induction cooktops require more power. If you have a 30" cooktop presently, you more than likely have a 30 amp breaker. Most 30" induction cooktops will require a 40 amp service. You will more than likely need an electrician to make this work. If you need to boil more than one vessel at a time, make sure to find out about power sharing on induction cooktops. Some cooktops will only be able to produce a boil on one burner while others are being used. This can be problem for large families or for those who hire caterers to cook for dinner parties, etc. Having said this, there are models available that you are able to boil more than one pot at a time. Make sure you know those models that can.
Imagine this scenario. You drag in from work and have to cook dinner for your family. As you get the food ready to go, you place to pots on the cook top to start heating up. Meanwhile, your two small children are running around the kitchen after being cooped up all day in day care or preschool. Before you know it, one of the trips and grabs the cooktop to stop from falling. Your child`s hand touches the edge of the burner that is hot and burns his hand pretty badly which means a trip to the hospital. This scenario can and does happen each and every day in households across the United States and around the world. Now, imagine the same scenario with a magnetic induction cooktop. Your child`s hand touches the edge of the burner but DOES NOT get burned! You get to fuss at your children, tell them to quit running around so wildly and then you kick them out of the kitchen. There is no burned flesh and no need to make a trip the ER to have your child`s hand treated for burns!
