The two most popular types of cooktops that are most sought after in the market are the electric and gas cooktops. Each has their advantages and disadvantages. Depending on your needs, each offers distinct features that vary greatly in terms of appearance, safety and performance. Therefore, if you are thinking of an upgrade from an existing conventional cooktop or are renovating your kitchen and are planning to get a new one, the electric or the gas version are your best bet.
Many of the reasons people use gas stovetops can also be found in induction cooktops. An induction cooktop heats food by generating an electromagnetic field when a piece of induction cookware, such as cast iron or stainless steel, is placed on the cooktop. The cooktop creates heat in the cookware which then heats the food. The cooktop stays cool except where the cookware is sitting, even if turned "on". Gas cooktop proponents generally tout the fact that the heat can be turned off instantly with no lingering heat and cooking temperatures can be regulated easier because no time to reduce or increase heat is necessary. Opponents of gas talk of the small leaks of gas into the house, the open flame, and greater potential for fire.
Induction cooktops come from the electric stove group. However, it is different enough from the traditional electric cooktop that it is considered as a new type of stove. Induction cooktops do not use any kind of electrical resistance to create heat. This kind of cooktop produces heat by using magnetic fields. The element which is the induction coils create heat in the steel cookware whenever a magnetic field is made. Induction cooktops cook your meals quicker than gas and electric cooktops. You can control the heat on induction cooktops just as easily as gas. As an added benefit, induction cooktops are safe compared to gas or electric stoves. If the pot on the cooktop is dry or incompatible material wise, the cooktop simply will not heat up. A dry pot on a gas or electric stove can easily catch on fire. With induction cooktops, the odds of that happening are much lower.
Other disadvantage of electric cook top compared to gas cooktop is the power supply. If there is a cut in the power supply, then there will be no cooking. In short, no electricity means no cooking. On the other hand, you can still do whatever cooking you like with gas cooktop even if there is no electricity.
In the past, if you wanted the best performing cooktop, you wanted a pro-style cooktop, or rangetop as it is commonly referred to in the industry. There are many brands that offer high output burners which will also give you a delicate simmer. These rangetops make it possible to boil something quickly while never having to move the cooking vessel when it is time to turn the heat down to a simmer. (You may have seen the chocolate chips melting on a paper plate demonstration showing how delicate some rangetops can be.) Most brands offering high-end rangetops will give you an incredible simmer. My favorites are Wolf and Viking as every burner will give you the low simmer and high output.
This is where Induction cooktops spark the interest of my customers who want the performance of a professional rangetop, but want something easy to clean. Induction - or magnetic induction - works on the molecular level. The magnet creates friction in the cooking vessel (ferrous metal pots and pans are necessary - if a magnet sticks to it, you are good to go) creating the most efficient source of heat at more than 90 % efficiency. Gas cooktops are about 60 percent efficient, depending on the model. Back to the cleaning issue... Because there is no heat passing through the ceramic glass on the induction models, they are a breeze to clean. You don`t have the usual burning in on the surface as you do with radiant smoothtop or gas cooktops. Soap and water usually does the trick to clean the induction top.
